The objective of the Department of Enology is to increase the quality of the wine through optimized processing and the development and application of adequate methods of wine production.

On the other hand, sustainability winegrowing is an important issue today, too. In winemaking it means the compliance with special oenological requirements regarding the new PIWI (fungi resistant) varieties.

Since 2009 the new Technical School offers top modern facilities which enable to run in-house projects as well as do research in co-operation with companies, universities and other institutions. The capacity of the controlled micro-vinification allows not only to do the in-house research but also gives an opportunity for students to work on their projects. On average, 300 to 350 test wines are produced annually.
